Staff who work Sundays are entitled to a premium under the Organisation of Working Time Act. roster breaks Sunday hours out on every timecard and in the payroll file so the premium is never a guess.
Since the Payment of Wages (Amendment) Act 2022, card tips must be distributed fairly and every employee gets a statement. roster splits the pool from hours actually worked and sends the statements.
